12 OZ. | Summer Ale |
Juice From One Lemon | |
1 TBSP. | Ground Coriander |
4 CLOVES | Minced Garlic |
2 TBSP. | Olive Oil |
Gremolata | |
3/4 CUP | Finely Chopped Cilantro |
1/4 CUP | Finely Chopped Italian Parsley |
Zest of One Small Meyer Lemon | |
Pinch of Red Chili Flake | |
Salt and pepper |
Step 1 |
In a medium bowl combine the summer ale, lemon juice, coriander, garlic, salt and pepper and olive oil. Place the chicken in the marinate and refrigerate for 1 hour turning the chicken over after 30 min. |
Step 2 |
Preheat your grill to medium high for 10 minutes, place your marinated chicken on the hot grill. Grill on direct heat for 25-30 min turning every 5-7 minutes. |
Step 3 |
While the chicken cooks, mix the gremolata ingredients in a small bowl. Season with salt and pepper, to taste. |
Step 4 |
Continue grilling chicken until internal temperature of the chicken reaches 170° at the bone. Place chicken aside and let rest for 5-10 mins. |
Step 5 |
Plate the chicken and generously top with the gremolata to serve.
TIPSThe beer helps tenderize the chicken and gremolata brings a freshness to the dish. Don’t like cilantro? Try using fresh dill. Side suggestion; roasted rosemary-garlic potatoes or pasta primavera. Seasonal Summer Ale or Columbia Valley Sauvignon Blanc. |
